Ricchissimo di proteine e nutrienti, è un ottimo antiossidante. È un cereale antico che veniva coltivato già ai tempi degli Egizi e ha una struttura molto simile al grano. I chicchi sono un pochino più scuri e allungati ma simili. Fino agli anni Settanta era un cereale poco conosciuto in Italia. La sua diffusione è dovuta alle problematiche legate alle intolleranze alimentari che sono aumentate negli ultimi decenni, certamente causate dalla modificazione sempre più frequente dei cibi. Il grano khorasan è divenuto un ottimo sostituto del grano tradizionale per chi soffre di intolleranze ma attenzione! Questo cereale contiene glutine e non può essere consigliato a chi soffre di celiachia.
